The World’s Best Turkey

The World’s Best Turkey

“This recipe makes a deliciously moist turkey.”

INGREDIENTS

  • 1 (12 pound) whole turkey, neck and giblets removed
  • 1/2 cup butter, cubed
  • 2 apples, cored and halved
  • 1 tablespoon garlic powder
  • salt and pepper to taste
  • 2/3 (750 milliliter) bottle champagne

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Rinse turkey, and pat dry. Gently loosen turkey breast skin, and insert pieces of butter between the skin and breast. Place apples inside the turkey’s cavity. Sprinkle with garlic powder, salt, and pepper. Place turkey in a roasting bag, and pour champagne over the inside and outside of the bird. Close bag, and place turkey in a roasting pan.
  3. Bake turkey 3 to 3 1/2 hours in the preheated oven, or until the internal temperature is 180 degrees F (85 degrees C) when measured in the meatiest part of the thigh. Remove turkey from bag, and let stand for at least 20 minutes before carving.

Planning a house party

Do you avoid entertaining because it’s too stressful? Relax! Believe it or not, it is possible to throw an enjoyable and, yes, relaxing dinner party. Your next social event can be a success with careful planning, and a few creative touches to make your guests feel special.

Why Entertain?

Having friends over is a great way to get things done around your home, share your creativity and have fun. Careful planning - and knowing that your home looks great - will allow you to enjoy your friends while dining.

Start by selecting your guest list to create a table of four to six. A larger number can divide the group into competing conversations and be a little overwhelming. A smaller group assures that you have sufficient seating in your living room and at your dining room table.

Call your guests three or four weeks in advance. You might want to follow this up with a handmade invitation in the mail. I like to include a few pressed leaves or flowers with my invitations.

Reduce stress by establishing your menu two weeks before your party. You may want to look through your cookbooks to try a new dish, but make sure you test it out on your family well in advance of the party. Select dishes that can be prepared in advance so you to can spend time with your guests, rather than slaving away in the kitchen.

Get Your House Ready

I want my house to look great for my guests, so as soon as I’ve decided to have a party, I make a list of all the things I’d like to get done around my house. I fit my chores into odd moments in the weeks before my party. Your to-do list might include edging the lawn, adding a few blooming flowers to the yard, cleaning or repainting the front door, cleaning the light fixture and doorbell surround, purchasing a new welcome mat, hanging a wreath from the door or setting a large clay pot of flowers on your porch.

Chores inside the home might include getting the carpets and windows cleaned, scrubbing scuff marks off the wall, buying new candles for the table and fresh towels for the guest room, cleaning out the hall closet and guest bath vanity, tossing or pruning tired house plants, rearranging treasures on the mantel and coffee table or replacing old pillows on the couch.

The Countdown

Being prepared and organized allows you to spend time with your guests and relieves the anxiety of wondering what you may have forgotten or what could possibly go wrong. Follow these suggestions and you’ll have a stress-free dinner party.

1 Week in Advance

Clean and iron your tablecloth, placemats and napkins. For fun, make place cards for each guest. For example, write your guest’s names on river stones, a pressed leaf or a seed packet. Decide on the outfit you’ll wear. Hint: You will look and feel in harmony with your home if you wear clothing that blends with your décor. Make a detailed shopping list.

1 or 2 Days Before

Shop for groceries. Dust and clean your house, with special attention to the rooms your guests will be frequenting. Freshen potpourri or add candles to hall table or guest bath. Stock the guest bath with toilet paper and tissues. Cook casseroles, desserts and anything else on your menu that you can prepare in advance. If the weather is cool, set up your fireplace for a cozy fire. Select music and place by the stereo. Freeze sprigs of mint or tiny sections of lemon in your ice cubes trays to use in water glasses. Run the dishwasher.

That Morning

Set the table and place flowers throughout your home. If you have a partner, divide greeting, serving, clearing and cleanup duties so that one of you is always with your guests. Place wine in fridge. Remove dishes from dishwasher and empty the garbage. Assemble a bag of favors for each guest: fruit from your yard, a small bouquet of flowers in a tin can or a handmade ornament. Select music to play in the background and get your CD player or MP3 player set up so that all you have to do is turn it on.

2 Hours Before

Prepare salad, slice bread and wrap in foil in preparation for heating. Create a serving station on your kitchen counter or table: lay out bowls, baskets and spoons to receive each of your dishes. Set up coffee maker and set out dishes that need to be cooked or re-heated.

1 Hour Before

Get dressed, light the fire, turn on the music, adjust lighting throughout the house. Sit down and relax until your guests arrive.

How to get your home cleaner — and greener

FRESNO, Calif. — Anyone who has ever cleaned a glass shower door with a store-bought cleaner promising to remove dreaded soap scum will attest to trying to do the job as quickly as possible to avoid the smell.

Breathing easier was uppermost in Teri Van Huss’s mind 10 years ago when she switched to homemade cleansers for her house, using ingredients such as vinegar, baking soda and lemon juice. The Visalia, Calif., resident did it for her son.

“I have a severely disabled son with cerebral palsy,” she says. “Kids with disabilities have sensitive skin and get a lot of rashes. I wanted to make my environment neutral, so I started to study what was in the cleansers we used.”

Van Huss, the director of finance and administration at the Sequoia Riverlands Trust, is the self-proclaimed “queen of environmentally friendly house cleaning.” She has taught workshops on alternatives to commercial cleaners at day care centers and Head Start programs.

Even just a few years ago, she says, people had “no clue” about the advantages of green cleaning. “Today, the interest is huge,” she says. “There’s a lot more awareness.”

Anyone with access to a computer can easily look up ingredients contained in cleansers and personal grooming products at the U.S. Department of Health & Human Services household products database at http://householdproducts.nlm.nih.gov.

Still, it’s difficult for some consumers to let go of the notion that using harsh household cleansers means a cleaner home.

“We have been so sold on the idea that a cleanser, one we have to wear rubber gloves to use, is better,” Van Huss says. “If it’s not strong enough to kill us, then it’s not going to clean.”

Claudia Garcia of Tulare, Calif., says Van Huss’ natural green cleaning recipes have helped her daughter’s asthma condition. Garcia worked with Van Huss as a translator at green cleaning workshops.

“I started using Teri’s recipes in our home and noticed that our daughter’s asthma had decreased,” she says. “She had constantly been using an inhaler and had red puffy eyes. About a year after using them, we noticed Yamilex hadn’t had asthma attacks.”

Garcia had to adjust to a new odorless scent of clean.

“I would wonder if the floor was really clean,” she says. “It didn’t smell like anything.”

The scent of vinegar became the norm at her home, and Garcia admits she missed a “flowery fragrance.” That was remedied by taking Van Huss’s suggestion of using drops of essential oils such as lime, lemon, lavender and orange.

The added benefit is “tremendous savings,” Garcia says. “I use hydrogen peroxide to clean whites, and it does get clothes cleaner than bleach. I just use about an ounce.”

Megan Assaf of Visalia, Calif., attended a workshop earlier this year.

“Knowing you need basically just a handful of basic things to clean the whole house made it easy to shop and easy to use,” Assaf says. “Instead of a pail full of products, now I just have three.”

Assaf says her switch to green cleaning has been an easy transition.

“My house now smells like the outdoors when I clean, instead of some synthetic approximation of it,” Assaf says. “I’m not breathing in petrochemicals that give me headaches, fuzzy thinking or lung tightness.”

Van Huss says her ability to relate to other moms helps get her message of avoiding toxic chemicals at home.

“I have a child who can’t afford to get sick,” she says. “There isn’t anyone who cares more about killing germs than me. It helps that I use these things myself. It gives me a lot of credibility.”

Van Huss says stores are now carrying products such as Seventh Generation, Method and Biokleen that are plant-based. She also recommends the book “Clean House, Clean Planet” (Pocket Books, $14) by Sharon Logan.

“It’s a good idea to look at this as a safety issue, a home is safer when you don’t bring anything into it that is dangerous, especially products that have a danger or warning label on them,” Van Huss says.
